Title: Frozen Chocolate Parfait

Name of Recipe:Frozen Chocolate Parfait
Number of People:
Ingredients:
4 whole eggs
2 egg yolks
150 grams of caster sugar
600 mls cream
300 grams dark cooking chocolate


Preparation:
Add all of the eggs and sugar to bowl speed 2 for 1 min
Insert butterfly speed 3 for 4 mins.  i wanted to use speed 4 but DH was watching the telly  :-))
In the mean time melt chocolate in the M/W or stove.
In a lager bowl add the sugar and egg mixture, and then add the melted chocolate
Whip cream to a soft peaks fold in into the egg and chocolate mixture
Line a tin loaf pan 13 by 22 with glad wrap pour mixture and freeze until frozen

this recipe is from my DD ,her chef friend gave it her about 10 years ago

Tips/Hints:
No need to wash the bowl after whipping the eggs and sugar, a good scraping will do.
 
Just as nice to serve it in a glass topped with some fresh whipped cream, not frozen just from the fridge.

Update -I added the whole 6 eggs and it was fine, saves having 2 egg whites hanging around.

I served it with some raspberries and it was delicious.
I followed your tip and just whipped the cream in the TM without bothering to clean the bowl after whipping eggs and sugar.

I have a stack of broken eggs and guess what I'm making!!!!!!!!  My whole family ADORES this ice-cream.......I can't believe no-one else has made it.  It keeps really well in the freezer - we've had some in the freezer now for 3 wks and the kids had a slice last night (I'd forgotten about it).  It's truly delicious.  Really beautiful served with raspberries.


BTW, how long do you think it'll go before icing up? I have another tub of cream needing to be used and I'd like to try the dark chocolate version.

Uni do you serve this as slices with fresh fruit slice (mango) or a coulis?  :)  :)

JD its only hard to take it out of the tin for the 1st time, i filp it on a borad a just rub my hands over the tin about 2mins later it was out.

slicing is very easy JD,if i find Springform Loaf Pan at a good price i will buy it and make it in there and bill damien for it  ;)

This sounds good but DW doesn't eat chocolate. I wonder if I could make a variation using something other than chocolate like pureed fruit?

I tried to use the method to make a chocolate and beet root parfait last year. I wasn't very pleased with the texture results and intend to try again. Your recipe should help me, so when I get round to to it I will report...

However although I wasnt pleased with the texture ( spoilt as I was by the plum parfait !), it wasn't wasted. I cut the parfait into ice cube sized chunks and whizzed them in the thermomix. The resulting ice cream was smooth, dark, shiny and delicious in its own right!

sorry ladies i should mention that frank does not taste all of the desserts that i  make, only the ones that i can get away with saying its  dark chocolate something  :-))

he loves the Chocolate delight, when i make it with dark chocolate :-))  i prefer the milk chocolate delight  ;D

HAve just made this to put in the freezer for tomorrow......mmmmmmm
Have a friend coming over and it is stinking hot in Brisbane at the moment and I refuse to turn the oven on ;D
Used milk chocolate to make it kid friendly (not necessarily for my kids but for the visitor's kids LOL) My children will inhale anything chocolate.
Will let you know how it goes!!!  I just licked the spoon and it was delicious.

I had that in the back of my mind whilst making it.... ;)
I'm trying to be relatively good at the moment and it would be a mistake to have it sitting in my fridge. At least my freezer is downstairs and it requires effort to go and eat from it ;D

I followed your tip fundj, and just whipped the cream in the TM without bothering to clean the bowl after whipping eggs and sugar (and I could use speed 4 as hubby wasn't watching TV). My husband loves the TM but hates the noise!!!! LOL

I'm going to make another today (the cream REALLY needs to be used up). Hubby came home from tour last night and LOVED it too!!! Can't wait to try it with dark chocolate - my hips are gonna LOVE it too!!!!
