Again adapted from Full Steam Ahead, but pulling on baf's idea for simple weekday meals:
Tuna or whatever in Varoma, seasoned.
Sauce:
500 g onions
200g EVOO
250g carrots, sliced
500g fish stock (or whatever, if not steaming fish)
50g red wine vinegar
100g white wine, eg Condado de Huelva
1 bay leaf
1 chilli
2 cloves
7 black peppercorns
PREPARATION:
Put everything (fish/meat & veg) in the Varoma like you would for any other Varoma meal and set aside for now
Sauce:
Add EVOO and onions, then chop 4 sec / speed 4.
Cook 5 min / Varoma / 2
Add carrots. Cook 10 mins / Varoma / 1
Add remaining ingredients, place Varoma in position, and cook 12 min / Varoma / 1 (or longer, if fish/meat requires it)
Serve fish/meat with veggies and sauce.
