Espresso Bites (bliss balls or squares)

These bliss balls or squares are a great snack with a coffee flavour, perfect for morning or arvo tea! The cacao nibs give these a wonderful crunchy texture.

Makes: Approx 25

Ingredients

    60g Medjool dates (approx 4)
    150g raw cashews
    80g walnuts
    2 tsp coffee powder
    20g cacao nibs
    1 tbsp water

Method

    Add dates, nuts and coffee  to Thermomix: 5 sec, speed 8
    Add water and cacao nibs: 5 sec, speed 4
    Roll into balls or press into a small lined tray (silicone loaf pan is ideal, no need to line)
    Refrigerate until firm then slice into squares if using tray

This recipe looks lovely Eva. I just have one query. A tablespoon of water is 20 ml, which would weigh 20g. Would you mind clarifying it for me please?
May all dairy items in your fridge be of questionable vintage.

Hi Cookie, go with the tablespoon measure, my scales showed 10g when I added it. I'll adjust the recipe actually, thanks

I've found that the times I've used the scales for such a small measure it can easily be too sticky  :(

Thanks for a lovely recipe. I made these today and they are delightful. I lovely anything coffee flavoured so I was drawn to this recipe. I used 1 tablespoon of water and 5 medjool dates as mine were a bit in the small side.
I pressed it into a square, lined tin that measures 18cm across the base. Not overly thick but quite rich & very moorish.

That's great Katj, yes I find I only need a couple. I'm the only one who eats these (as DH has separate chocky ones) so a batch will often last me a couple of weeks.

I didn't have cacao nibs so used chocolate drops = delicious!  Thanks for this lovely recipe.
