Nut and seed spread or paste
« on: June 09, 2016, 10:11:45 pm »
This recipe can be adjusted to taste or to what you have in pantry. But it is important to roast the almonds and cashews.
The resulting spread can be used as you would use any nut spread but has a nice crunch from the seeds.
Ingredients
130g Almonds, with or without skins, I used with
130 g Cashews
130 g Brazil nuts
1 dessertspoon Tahini ( mix in the oil well before you use it. )
1 dessert spoon of pumpkin seeds
150 g of a mixture of chia, quinoa, poppy seeds, sunflower seeds.

Method
Roast Cashews and Almonds until brown but not burnt. Cool.
Add roasted cooled nuts, Brazil nuts and Tahini to TMX bowl and grind until a smooth paste is formed, speed 9/ 30 seconds and the further bursts of 10 seconds until a smooth paste. Scrape down as necessary .
Add pumpkin seeds and grind until small flecks of seed still evident.
Add remaining seeds and mix at speed 7 until mixed through.
Taste and if too much crunch, mix at speed 9 to obtain desired texture.
Bottle in small sterile jars.

Notes
It is important that the nuts are fresh.
The Brazil nuts are necessary to balance out the other flavours, they are expensive but very nutritious .
Recipe could be doubled but not halved as it needs this volume to grind successfully.
Could add a teaspoon of honey or a little salt but we felt this was not necessary.

I think I'll give this a go over the weekend, Chookie, but could you clarify that you mean chia not chai?

Good one Chookie, did you make it for the GKs or yourselves?  Ah, I've since read about this paste in another posting and can see now the ways in which you can use it so I guess the GKs won't be getting a jar LOL.

It was this posting of yours in What are you Cooking Chookie which explains what you plan on using the paste for.

'Bought a very expensive jar of nut and seed paste at the Creswick Farmers market. Thought I could make it in the TMX.
While a friend was staying we had a go. Nice to have an extra taster on hand. It cost a 1/3. Will post recipe as good to add to soup, as a dip or fill celery sticks. Use as you would other nut butters but has an extra crunch from the seeds.'

Just made this for DH - he liked it very much - I am sure it must be better for him than the peanut butter to which he is addicted!

That is good Marina. The Brazil nuts are particually good.
Must try the Middle Eastern one.

I was planning to make this today but don't have Tahini. I will look at making some, otherwise it will be made tomorrow. DH loves his peanut butter and wasn't impressed with the home made one, so he may like this. Or I could add sugar etc to the home made one!!
I will root back when I make it.

I knew I had seen this recipe somewhere, but had forgotten exactly where!  I was just talking about 'ABC' butter to my colleague at work today, so having this recipe bumped was very timely.

I must admit I remembered Chookie saying about it, but I came across this by accident.
After reading the reviews of making your own Tahini I decided to wait until I bought some tomorrow.

This is very tasty indeed. I did add a little salt to mine. Now I have to control myself and not eat it by the spoonful. Thanks Chookie.
