This is such a yummy treat and my children's favourite dessert. I was wondering if anyone had turned it into icecream? Would it work as is or would I have to add some cream?

I'm just making a batch of this custard to see if it works for ice-cream Thermobudgie - I have added 1/4 cup Butterscotch Schnapps to it though to try to make it easier to spoon from frozen.  Will let you know tomorrow how it turned out.

I love butterscotch schnapps too, I have a bottle... what a good idea! can't wait to hear the result !

Hi Bluesed - thanks for that informative post . . I've just caught up with it . .  . we really enjoyed this one and it was quick!! but we'd like to give your suggestions a go, too - thanks!

 Know the feeling about "don't poke your finger in it!!"  I did this years ago when I first made some jam.  Heating along nicely when the surface looked as though it were solid (lol!) . . . . thought I'd just put my finger on it to feel . .  . . in it went and I spent the rest of the afternoon walking around with my finger in a cup of iced water!  ahhh . . .experience teaches best of all . . .   ;D ;D ;D

The beauty of having an ice-cream maker is that I have made this recipe into ice-cream and had my first soft serve cone within 3.5 hours.  It is really lovely and with the addition of Butterscotch Schnapps, tomorrow will tell if it had the desired effect of making it spoonable from the freezer.  

Update Unfortunately the alcohol didn't have the desired affect but it does give it a nice flavour so I will continue to add some to this recipe anytime I make it for ice-cream.

We made the custard yesterday, and it was devine. Probably the best custard I have eaten. Thanks Jo for another great recipe.

Butterscotch Schnappes YUM now I wonder if you could make a Cowboy cocktail custard. Butterscotch Schnappes and Baileys  :D

JudyDawn, do you think it would work if you let custard set in fridge and then when cold, back into TMX with a couple of egg whites and whipped together and then put in freezer?

Would be great for adult parties, hens nights, girls night in etc.

mmmm now you have got me thinking..... Midori, pineapple and coconut cream (splice) custard. Will have to have the girls around for this one  :D

Kulsha, I've never used egg whites in ice-cream but if you follow the method for the EDC traditional ice-cream and place the cold caramel custard into the freezer then beat it as per instructions, it should work.  I can't see that adding egg whites would be a problem but is it really necessary?  Someone else may know the answer to this one.

The most perfect (and easiest) 'icecream' I've made so far was just frozen fruit, sugar and egg whites (more of a sorbet). The frozen end result spooned out so soft and creamy it was hard to believe it wasn't actually icecream, and it didn't require any further blending after being frozen. i thought perhaps the egg whites were the key ingredient that gave the aeration that prevented it going hard although I know sugar also helps (and alcohol)... so I was wondering if applying the egg white technique to an actual custard recipe would also work?  :-\
