Made up a small batch of soup which turned out surprisingly nice. Tin chopped tomatoes, small tin mixed beans, drained and rinsed, 1/2 red capsicum, small stick celery and handful fresh herbs from garden. Tin of water, 2 Soup cubes. All in TMX, 20 minutes, 100 degrees, 1 1/2 speed. Served with leftover garlic bread that I refreshed in the toaster.
I saw a recipe that I thought was a bit different. Which I changed a bit.
1 tin potatoes, ( $2 Woolies) drained and dried on kitchen paper.
Splash of EVOO, garlic powder, good pinch of Italian herbs, S and P.
Gently mix with potatoes.
Heat AF for 3 minutes , 200 degrees, then add potatoes. Bake 15 minutes.
They should be crunchy.
A couple exploded and these were particularly nice and crunchy. I thought they might be nice smashed with the mixture brushed generously over them.

That sounds an interesting recipe, Chookie - I have never heard of tinned potatoes.

Marina, I have had them many years ago and they tasted awful. The ones I tried for this recipe were fine. A little different from freshly prepared ones but ok. Think they would be good in a potato salad if in a hurry. I’d add lots of herbs. There were some quite small ones in the tin.
I saw Annie Smithers serving toasted Panetone with soft French cheese like Brie.
I’m having people I don’t know well for morning tea. Not sure what to serve. Scones, sweet or savoury or biscuits , ? Cake ?.

If they like sweet Chookie they can have jam and cream and if they don't they can have the scones plain.
No cooking for me today. I popped up to the Italian deli this morning. I only wanted some nice fruit. However a small fortune later I staggered to the car. I found a jar of sour cherries there all ready to make a cherry pie. Naturally I bought them. It will work out cheaper than buying the cherries. Sadly it was too dry for the cherries in Manjimup to produce much this season. (our local products come from there)

The cherries in Melbourne have been very expensive this year. $100 for a 2 kilo box, top grade ones.
Im glad I’m growing a few veggies and herbs, as I’m horrified at the cost, also.

Gosh, those cherries are expensive. It makes me feel even luckier than usual as our neighbour had more cherries than he knew what to do with and gave us a couple of kilos!!! They were really tasty too

Marina, free fruit is always a bonus.
I’ve been experimenting with my Falafel recipe. My new door neighbour is constantly sending in fresh veggies from her garden. Beautiful purple Cauli and lots of lettuce and cucumbers . The Cauli plus some Zucchini from my garden made very tasty Falafels. Very little effort in TMX, sprayed with oil and baked for 15 minutes in AF. Low fat, Gluten free, hot or cold. Reheat well. Perfect light meal with lettuce and yogurt cucumber sauce.
No Fuss bread rolls turned into garlic bread.
Pepper and Sage Risotto. A nice light risotto for warm weather. Serving it with roast chicken ,marinated in lemon, garlic and herbs.

Made Risotto in TMX, as I usually do. Turned out a bit gluggy. Think it must have been a different brand of Arborio rice. .
Now what to do with a mountain of leftovers.
We are baking a Carrot cake for boys Mums Birthday. Also Jam Donuts. They will mix dough, I will fry and they will do sugar and jam.
