I made some ricotta and spinach gnocchi and made a sort of salad from them. It was delicious.

I have very full freezers at the moment (again!) and there are bits and pieces of everything in there. I had a tub of home made cream of celery soup and one of cream of mushroom so I built a meal around those 2 items. Both were able to be broken in 2 so I still have them for another meal down the track.
I microwaved 2 potatoes, cut them in slices and placed on the bottom of a casserole dish, sprinkled some grated cheese on top then topped with a 175g can of tuna and some frozen corn/peas. I mixed the 2 soups together with a bit of milk to thin the mixture, added 1/4 cup of frozen shallots and poured that over the top. Covered with very cheesy breadcrumbs and baked 30 minutes. It was very tasty, I will be eating it for the next 2 nights as this is the leftovers. If I do it again I’ll try cooked chicken instead of tuna as I have packs of that in the freezer too.

We had a roast chicken tonight...with salad from the garden, zucchini slice made with home grown zucchinis, roast potatoes and pumpkin

Judy, very creative. Love using up leftovers. I have cleared out one freezer. Feeling very pleased with my self.
Astarra, your climate is very much like ours but you do much better with growing your veggies. You eat very well from the garden.
