Yesterday I made 'sour cream & chicken enchilades' from the AU cookidoo. It has high ratings so thought I'd give it a go. Makes a lot as you use 10 tortillas. Was good to use up some chicken tenders and a breast from the freezer to make up the amount needed.
It looked really good and I cut a corner off to try it and thought it was really tasty, surprised really. DH loved it. I've divided it up now into 2 tortilla serves. Will make again.
I served with RTE's pasta salad that I've made numerous times. It's very much like what you buy in supermarkets in the ready to go section. The recipe makes heaps and I freeze in 2 serving size. Used normal macaroni this time as I'd run out of elbow.
Just a note, I discovered a really tasty cheese that caught my eye and was my first time trying. I used it in the enchilada meal. It's Coles home brand 'Red Leicester'.

If there is one thing I really miss it is cheese ... because DH is lactose intolerant I rarely buy cheese, but I love it melted over food or a toasted cheese sandwich ... having said that, with your recommendation, I might just sneak down to Coles and buy a small block of that Red Leicester and treat myself.

Staff Xmas party at our place last night ... catered for, thankfully, but I ordered way too much food. I gave everyone doggy bags but we still have enough food to keep us going for days!!!

Yum JulieO. I love Red Leicester cheese but haven't tried the Coles one. I will do so, maybe after Christmas, as I would eat too much of it.
We are having Tandoori chicken with rice and fresh asparagus and Naan.

I was quite taken with it Cookie, thought it had a lot of flavour. So many cheddar cheeses are quite bland.
