Fish and Chips for a cheat's dinner tonight.  I managed to eat a little bit of the battered fish but had no luck with the chips.

DS requested butter chicken.. due to hot weather I changed it to a tray bake mango chicken curry . Not bad but need to modify less moisture and a little more rice . I held back some mango pieces to put in on top .

It was 44° here today. Very hot. We had quiche with vegetables.

 Lamb back strap with quince paste . The other night we had salmon with spicy cashews and udon noddles on cookidoo . DH cooked dinner a few nights for DS as I was unwell and did not eat . So meat and any vegetables that can be roasted in the oven was their meals .

Tomato’s everywhere. Little ones fresh from the bushes. I found a recipe for an unusual salad. Small tomatoes cut in half, small amount of chopped mint and tinned peaches. I used small containers of diced peaches. Fresh and different.
I served this with grilled lamb cutlets , mashed potatoes and baby peas.
Playing with my new Ninja BBQ, I baked a small loaf of bread . Pretty good but need to make the dough a bit wetter and bake at 180 not 200 degrees.

Last night the men had cold roast turkey roll with salad.  I had fish fingers with salad.  Dessert was a piece of Strawberry Cheesecake I found in the freezer ] using strawberries in place of pineapple. CP'S MUMS PINEAPPLE CHEESECAKESLICE

Tonight we are having marinated salmon with salad and the rest of the cheesecake for dessert.
The  man who said it can't be done should not interupt the woman doing it.

That looks delicious Mab. We had a beef stir fry with noodles last night. Except when I made the noodles I put an egg in, so technically we had a beef stir fry with spaghetti. 😀😀😀 No one noticed.

That looks great Margaret. I’ve made the pineapple one for DF but I’m not keen on pineapple these days so the strawberry substitution would work for us both. What did you do differently in Step 3 seeing as there is no juice to us please.

Judy I stewed a punnet of strawberries and used about half a cup of the liquid.  I'm not sure how much juice is in a can so I just guessed it.  This is an old photo.
